BURGER BUNS

Hi HF Readers… I’ve been MIA and as usual, I am sorry. There is something I’ve been working on and it’s taking all my time. A reader sent a DM to me last week on my twitter and asked if I could upload an easy recipe for Burger Buns and I said YES. So, here is how to make easy burger buns at home.

First of all, this recipe is so old. I’ve had it for 4 years now and I honestly don’t know why am just uploading it now. Here is a list of all the ingredients you will need. These measurements will give you 6 burger buns, so you can double the recipe if 6 will be not be enough. 

  • Yudane
  • 300g Artisan Bread Flour
  • 150g Whole Milk
  • 6g Salt
  • 4g Yeast
  • 25g Sugar
  • 25g Unsalted Butter
  • 1 egg
  • 1 egg yolk

You need to make the yudane first. Yudane is a Japanese secret that we use to achieve really soft bread. It is made by combining 20% of the total bread flour in the recipe and boiling water, at a ratio of 1:1. So if your recipe says 500g bread flour, you fetch out 20% of the 500g, which would be 100g. Combine that with 100g of boiling water. In this recipe, I said you need 300g Artisan Bread Flour. So you take out 60g of the flour, pour 60g of boiling water and mix very well, until you get a paste. But to be honest, when I made these buns, I used 50g flour + 50g boiling water for my yudane, which is absolutely okay.

Let this mixture cool down and keep it in the fridge for anything from 8 hours, to (preferably) as much as overnight. 

Now that you have the yudane, let’s start.

Into a Pyrex jug or whatever you have at home, pour the milk, yeast, sugar, egg, egg yolk, salt and mix well to dissolve the sugar and yeast. 

Pour the liquid mixture into the bread flour, add in the yudane and the butter, and mix everything together until a dough is formed. Move the dough to floured surface and knead briefly to get a smooth ball of dough. 

Grease a stainless steel bowl with some butter and keep the dough to rise in a warm place for 90 minutes. Once risen, prepare your pan for shaping. I’ve lined a tescoma pan with a baking mat. You can use a parchment paper. 

Measure the entire dough on a scale, then divide the weight by 6 to get equal sized buns. Shape the buns into a perfect round shape and let them rest for another 30 minutes.

Brush the top with egg white. I added milk to my glaze and it got messy_ I will not be adding milk again😂. Burger buns are incomplete without sesame seeds. Sprinkles some seeds on top. 

Bake in a preheated oven at 150 degrees for 20 minutes. 

If the top doesn’t get the brown color you want, turn on broiler for 2-3 minutes. When you turn on the broiler, move the buns far away from the broiler and use low heat. 

Take the buns out of the oven and let them cool on a rack wire.

Burger buns

You can use these buns to make your classic burger, or you can simply eat with any spread of your choice.
